How irresistible is this bowl of glistening, ruby red, sweet tart cherries? I love that pop of juice in my mouth as you bite into the fruit! I even love the splatter of messy red juice stains on my chopping board and hands while I’m pitting cherries. We eat them by the cartloads all the time when in season that could be because I ALWAYS purchase them by the cartloads!! For a very good reason though…..
I get to bake with them, think tarts, muffins, coffeecakes, cheesecakes and use them to make our summertime specials…ice creams, frozen yogurts and popsicles! Drool, slurp, drool!
Now making frozen treats does not have to be complicated at all. Keep the ingredients simple, play around with the recipe a bit till you get what you enjoy. Only piece of equipment you will need is popsicle or kulfi molds, that’s it. An ice-cream maker is a great appliance to have for making ice creams and frozen yogurts. But not to worry, if you don’t have one, use a blender or ze good ol’ hands!!
Frozen yogurts are so fabulous. Creamy and sweet, they make for a perfect low calorie, healthy dessert. Let the delicious, in-season fruit do all the talking. Add more fruit to intensify the flavor, add more yogurt to enhance the smoothness. They are easier to make than ice creams ,not that it stops me. But more on ice creams later….
So let’s get on with the Cherry Frozen Yogurt
Hung yogurt – 500gms ( hung for 3-4 hours minimum)
Cherries – 150gms, pitted
Honey – 4/5 Tbsp
Choc chips – 50 gms (optional)
Cherries – 50 gms, pitted
Put the yogurt, cherries (150gms) and honey in a blender. Whiz until smooth. Taste, and adjust for sweetness.
If using ice-cream maker – Chill , add the extra cherries and chocolate chips ( if using) and freeze in your ice cream maker according to manufacturer’s instructions.
By hand – Pour the mixture in a large bowl and freeze it without adding the extra cherries and chocolate chips for 1 to 2 hrs. Take it out of the freezer and beat vigorously with a whisk/ electric beater or simply blitz it in your blender. Pour it back in the bowl and freeze again. Repeat this process 2 more times. Everytime you whisk or blend this, you are breaking down the ice particles and making the mixture smoother. The last time you you blend it, add the chocolate chips and cherries. Pour this in an airtight container and freeze for 6 to 8 hours or overnight.
Cherry Limeade Popsicles
Lemon juice – 3 lemons
Sugar – 4 tsp
Cherries – 60 gms, pitted
Water – 500 ml
Blitz all the above ingredients in a blender. Taste, adjust sweetness or sourness according to your preference. You can strain the mixture if you don’t want bits of cherry peel in your popsicles. I didn’t , as we don’t mind it at all.
Pour in the molds and freeze for 8 to 10 hours or overnight.
