Sweet Potato Oven “Fries”

For years I’ve used  sweet potatoes for making “shakarkandi ki chaat” or in a sprout salad as these were the only  two ways I’ve known how to cook them!  While I love both the dishes to bits, this roasted version really took me by surprise.  More so for my kids, who are happy to forego the entire dinner just for  these hearty and comforting beauts!  Be warned these Sweet Potato Oven Fries are dangerously addictive….

Sweet potatoes are not only inexpensive and easily available, they are also one of the healthiest vegetables out there with a good dose of fiber essential to facilitate digestion. They are an excellent source of vitamin A.  Rich in fiber, vitamin B6, vitamin C and D, they also have high iron and magnesium ( which helps with chronic fatigue and insomnia!)  content.  Being complex carbohydrates, their natural sugar is released slowly in the body, thus providing balanced energy without  any spike in the blood sugar level.

Because sweet potatoes are naturally sweet tasting, they are a happy recipient of spices and roasting them just intensifies their flavour, caramelises them  on the outside and keeps them  tender on the inside.  The taste is  sweet, spicy, savoury, crispy all at once.  They are so simple to make….just cut them up, toss with olive oil, seasonings and let your oven do all the work.  Dunk them in your favourite sauce ( I used my homemade vegan mayo), eat them on their own or as a delicious side to this veggie burger.

Ingredients
  • 1 kg Sweet Potatoes Well scrubbed
  • 3-4 Tbsp olive oil
  • 1.5 tsp Smoked paprika
  • 1 tsp Chilli flakes
  • 1.5 tsp Dried thyme
  • 1/2 tsp Turmeric
  • Salt to taste
Instructions
  1. Preheat the oven to 200C.
  2. Thickly slice the sweet potatoes lengthwise. Toss with olive oil and all the seasonings.
  3. Spread out evenly on a baking sheet.
  4. Bake for 20-25 , turning the wedges every 10 minutes until cooked through and lightly browned.
  5. I like to put them under the broiler for the last 5-7 minutes to make them extra crispy and blistered.
  6. Serve warm or at room temperature with any sauce of your choice. Enjoy!!
