Our school exams start in a couple of days. Study sessions are on full swing. With that I mean, all the notebooks, textbooks, pens are organised on the table, I am going over the notes, while the child is playing with his fidget spinner!! Periodically ( every thirty minutes) a snack is requested for, preferably in the form of chocolate/ candy bar. Well at least that I have control over. For now. So to satisfy the hungry little snacker I made these easy peasy, delicious Coconut Almond Rose Bliss Balls aka laddoo!!

Bliss balls are really so simple to make. Once you’ve gathered the ingredients, it takes no more than 15 minutes to make them…from start to finish. Zero cooking and you only need your blender/food processor.

It also helps tremendously that they are nutritious, refined sugarfree, filled with the goodness of almonds, coconut and dates. They are by no means a low-calorie food. But then, I was never a calorie counter.  I believe in the quality of calories consumed and portion control. A little bit of moderation goes a long way towards good health. And who am I to complain when I’m eating goodies that are loaded with healthy fats, vitamins, minerals, fiber and are so tasty!! 🙂

These treats are great for study sessions, post workout snacking or for anytime those hunger pangs hit!  I think they’ll be great for the upcoming Diwali season too, especially because of the delicate rose flavour in them…makes them so festive. Serve some to your guests, pack them in a pretty glass jar for gifting. Spread the joy, spread the love!

Ingredients
  • 1 cup Dessicated coconut
  • 3/4 cup Almonds
  • 15 Dates, soaked in hot water for 10 minutes Save the water, as you might need it.
  • 1 Tbsp Dried Rose Petals
  • 1.5 Tbsp Flax seeds
  • 1 tsp Rose water
  • 1 Tbsp Dried rose petal powder, finely chopped pistachio, dessicated coconut Optional, for topping
Instructions
  1. Add all the ingredients (add dates without their water) to a blender or food processor. Blend together till everything is smooth and sticky. Taste and adjust for sweetness. If you'd like it to be sweeter, you can simply add some honey/maple syrup/ agave syrup, to the "dough".
  2. If the mixture is too wet, add more coconut. If its too crumbly, add some of the saved date water.
  3. Roll the dough into equal sized balls. Coat them with pistachios and / or a mixture of coconut and rose petal powder. These need to be stored in the refrigerator in an airtight container.
Recipe Notes

For the ROSE PETAL POWDER, simply grind dried rose petals in your coffee grinder and sift it once to get a fine powder. Store the balance in the freezer, use to top yogurt, kheer, icecreams!
