Diwali countdown has begun! I’m busy wrapping up my work orders, home repair projects. The house is getting a sparkle and shine, we are filling it up with flowers, candles and diyas. Yes, you can almost smell the sweet excitement in the air. With the biggest festival comes the food..sweet, savoury, rich, delightful, indulgent ! What’s Diwali without mithai? And nothing like homemade treats like these Easy Coconut Ladoos ( laddu) !
I love making quick and easy jams, compotes, chutneys at home. Quick and easy being the keywords here! Anything with more than 5 ingredients and 3 steps, and you’ve lost me forever!! 🙂
This Beetroot Apple Ginger Chutney has stayed with me for just this reason. Not only is it a really fast one, but it tastes like you’ve slaved over your stove for ages and looks fancy enough to put out on your fanciest cheese platters..I mean just look at that intense ruby red colour!!

But what if I told you making them is one of the easiest bit of baking you’ll ever do. You need no special equipment ( except an oven!) and the ingredients come straight from your pantry shelf. And you are rewarded with the tastiest crackers that no boxed variety can match!
So this Cashew Chocolate Chia Pudding happened the other day. I’m still not sure if I ate dessert for breakfast or was it breakfast for dessert?! I think it worked beautifully either ways, I mean if you’re into deeply chocolatey, luscious pudding kind of treats! 🙂
