Summers are here in all their fury! We have icecreams and popsicles, in all shapes, sizes and flavours to beat the heat! And I've got for you an easy breezy 4 ingredients frozen treat..my fresh & Fruity Chia Seed Popsicles!
Given my propensity to over buy fruits of the season, there are always a few languishing at the back of the fridge. Then there are rescue missions to save them as even one cannot be wasted. More often than not, we get a wonderful treat out of them. Like some compote, jam, a small cake, a layered pudding or the most popular of all popsicles. And that's the story of these Fruity Chia Seed CocuPopsicles!
While these popsicles may have been made from sad leftovers, the taste was anything but. In fact, they turned out so refreshing and delicious that they've already been made three times in the last 2 weeks!
I love that these are totally jammed with fruits. We have cherries, mangoes, pomegranates, apricots and peaches here. So fresh, ripe and juicy! I was out of jamuns ( java plums) and litchis, otherwise they would've joined the pack too!
Chia seeds give a delightful crunch while the plain Greek yogurt makes them ultra creamy and unctuous. Lightly sweetened with honey, these popsicles are really an explosion of flavours and textures. And lets not forget how wholesome and nourishing they are. In fact, I would absolutely eat them for my breakfast...think frozen chia pudding!

Fruity Chia Seed Popsicles
Ingredients
- 350 ml Greek yogurt, plain
- 3 tbsp Chia seeds
- 3-4 tbsp honey
Mixed Fruits
- 25-30 Cherries, pitted and chopped
- 1/2 Mango, diced
- 5 Apricots, diced
- 2 Peaches, diced
- 4 tbsp Pomegranates
Instructions
- Combine the yogurt, honey and chia seeds in a medium size bowl.
- Stir in the fruits. Taste and adjust for sweetness. Spoon into the popsicle molds and freeze for at least 8-10 hours or overnight.
