I really enjoy mojitos. Really what's not to love? They are so refreshing with a lovely mint flavor and that lemon juice really brightens them up. Just a perfect match with white rum. Add some fresh pomegranate to the mix and you have a beautiful showstopper of a cocktail!

Recipe Ingredients

- White rum - please don't use dark rum for this recipe
- Pomegranate arils
- Fresh mint
- Lime juice
- Lime slices
- Sugar
- Club soda
- Ice
How To Make a Pomegranate Mojito
The recipe for this Pomegranate Mojito is just as simple as it can get.
Step 1: Place the pomegranate seeds, lemon slices, mint leaves, and sugar in a glass. Use a spoon or muddler to muddle to extract the juices and release oil from the mint.
Step 2: Add in the lime juice and white rum.
Step 3: Add ice and top with some club soda.
Step 4: Garnish with mint leaves and some pomegranate seeds. Serve immediately!

How To Make a Mojito In A Pitcher
For making a batch cocktail, add the pomegranate arils, lime slices, mint, and sugar in a pitcher. Muddle to release the juices.
Add the white rum and lemon juice, and place the pitcher in the refrigerator.
Add the ice and club soda just before serving; otherwise, the ice will melt, diluting the cocktail.
Top Tips
- Serve the pomegranate mojito as soon as it's made. You don't want the ice melting and diluting the drink.
- You can mix in some pomegranate juice if you want a stronger pomegranate flavor, like in my pomegranate mimosa recipe.
- Please use fresh lime/lemon juice and fresh mint for the best flavor!
- Remember not to muddle the mint leaves too much..just enough to release their lovely flavor.
- You can easily substitute sugar with honey in this recipe for a lovely floral note or use a simple syrup.
- If you don't have a muddler, like me, a spoon will do the trick just as well.

Pomegranate Mojito
Ingredients
- 2-3 tbsp Pomegranate arils/ seeds Plus more for garnish
- 6 Fresh mint leaves Plus more for garnish
- 1/2 tsp Sugar
- 3-4 Lemon slices

- 1.6 oz / 50 ml White Rum
- 1/2 cup Club Soda You may need more
- 5-6 cubes Ice You may need more
