It’s the simplest things in life that give us pleasure, right? A walk in the park, a nice movie, a good book, a cup of tea….why complicate when we can so easily make ourselves happy? No, don’t worry, I haven’t suddenly achieved a zen- like attitude …though God knows how much I need it!! But I do like to use this philosophy whilst in my kitchen. The sun is beating down on us with a vengeance it seems. With the heat and dust, comes the generous blessings of glorious bounties of summer. Bright, vivid, sweet stone fruits are a sight for sore eyes and undoubtedly make this weather bearable.
Now hot or not, bake I must. And bake I must with these gorgeous fruits. So first thing this morning, before the day took over, I quickly put together gluten-free Peach & Plum Crumb Bars. These were certainly a scrumptious mid morning treat, lightly sweet and tart with soft buttery crust and a crunchy crumb topping!
Today I have for you this 3 ingredient, healthy, easy peasy Mulberry Chia Seed Jam recipe …. and its absolutely delicious! Mulberries are a very popular munch food in our house. And the over enthusiastic mulberry lover that I am, this week my refrigerator was overstocked with them. I had to think of doing “something different”, real quick… as mulberries have a short season and a shorter shelf life. And so boom..this jam was born!
