The perfect, indulgent dessert to make ahead of time!

Cheesecake Crust – Marie biscuits, crushed –Cocoa powder –Butter, melted Cheesecake Filling – Cream cheese, room temp – Caster sugar – Eggs – All-purpose flour – Baileys Irish cream Baileys Ganache – Dark chocolate  – Cream – Baileys Irish cream


The Crust:  ~ Combine crushed biscuits, butter & cocoa powder  ~ Pat firmly into cake tin  ~ Bake for 10 mins

The Filling:  ~ Whisk cream cheese & sugar. Then add in 2 eggs. ~ Mix in flour till smooth  ~ Finally, add in the Baileys

Pour the cheesecake Baileys filling on top of the crust and then bake for an hour!

Once baked, crank the oven door open & let the cake cool with the door ajar for an hour.

 Now you can chill it for  4 - 8 hours. But, like me, you can opt to chill the cheesecake overnight. That's my go-to method!


Once cooled, top with the easy chocolate ganache

Dust with gold dragees if you want a more festive touch, and serve!
