Roasted Carrot Hummus

– Chickpeas – Carrots – Garlic cloves – Tahini – Turmeric powder – Lemon juice – Salt  – Fresh Cilantro all ingredients below!

step 1

Rub olive oil on the vegetables and sprinkle with salt & pepper.  Roast for 20 mins, until the vegetables are cooked through. Let them cool.

Add the vegetables to the food processor along with the chickpeas, tahini, lemon juice, turmeric, cumin, olive oil, water and salt.

step 3

Blitz till smooth. Once the hummus has reached the consistency you prefer, add herbs and blitz for a couple minutes extra to make it creamier and fluffier.

Spoon on to a bowl or plate, top with olive oil and serve. Enjoy!
