– All-purpose flour – Butter – Caster sugar – Egg – Lemon juice – Lemon zest – Vanilla extract – Icing sugar all ingredients below!

In a bowl, whisk together the flour, baking soda, cornstarch and salt. Set aside.

In another bowl, beat together the butter and caster sugar until light and fluffy. Add the egg, lemon juice, lemon zest, and vanilla extract. Mix well.

Mix the flour mixture into the butter mixture and combine using a spatula until a soft dough is formed.

Refrigerate the dough until firm, at least 3 hours. Preheat the oven to 180 C and line a baking tray with Silpat.

Scoop out the dough into 1" balls and coat in granulated sugar, then liberally in icing sugar. Place on the tray and bake at 180 C for 10-12 minutes.

Let the cookies rest on the tray for 5 minutes before placing them on a cooling rack.
