Vegan Chocolate Pumpkin Swirl Muffins!

The easy muffins are incredibly flavourful, soft & tender! Plus, they are vegan & made with  healthy ingredients. 

ingredients

– Wholewheat flour – All-purpose flour – Baking powder – Baking soda – Salt – Pumpkin spice  – Sugar – Almond milk (use any milk) – Apple cider vinegar – Coconut oil  – Pumpkin puree  – Vanilla extract – Cocoa powder

step 1

~ Sift together the dry ingredients in a bowl ~ Mix the wet ingredients in another bowl

~ Combine the wet & dry ingredients.  ~ Fold in the chocolate chips - nuts too if using!

Divide the batter in half. Stir in the cocoa powder in one half of the batter.

~ Put 1 tbsp of pumpkin batter in each muffin cup, then 1 tbsp of chocolate batter on top. Repeat the layers one more time ~ Gently create swirls  on top!

~ Top with a few extra chocolate chips before baking if you'd like!  ~ Bake for 20-22 mins.
