In a land wedged against the Black Sea, the love affair of bread &amp; diary has been ongoing for generations.&nbsp;<\/p>\n\n\n\n<p>They call it Khachapuri.<\/p>\n\n\n\n<p>Despite staying in Moscow for one and a half years, I never got around to trying the famous Eurasian dish. Each region of the country has its favorite iteration of the savory bread. When it starts to come together drizzle in some olive oil to make a soft, supple, and elastic dough. Put in a well-oiled container and cover with a damp cloth.<\/p>\n\n\n\n<p>FYI, you can use any of your favorite pizza dough recipes. You can use any cheese you have at home. For the ricotta, if you know how to make a homemade one, now is the time to make some.<\/p>\n\n\n\n<p>I added some fresh thyme and purslane from my garden to the cheese. The purslane was saut\u00e9ed in olive oil for a tad 2-3 minutes, till it wilted just a soupcon.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-what-s-purslane\">What\u2019s purslane?<\/h4>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.tashasartisanfoods.com\/blog\/wp-content\/uploads\/2020\/05\/IMG_3903-884x1024.jpg\" alt=\"Purslane\/ Kulfa ka saag\" class=\"wp-image-11638\"\/><\/figure>\n\n\n\n<p>For those who are new to purslane, it\u2019s also called\u00a0<em>kulfa ka saag.<\/em>\u00a0The green leafy succulent grows wildly during summer, and most people mistake it for a weed.\u00a0<\/p>\n\n\n\n<p>It is not.&nbsp;<\/p>\n\n\n\n<p>The entire plant is edible \u2013 leaves, flowers, and all \u2013 and filled to the brim with nutrients. It has Vitamins E, C, and A. It is rich in dietary fiber. And it has loads of omega-3 fatty acids.\u00a0<\/p>\n\n\n\n<p>If you don\u2019t have purslane growing in your garden, look for it at your local vegetable vendors.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-variations-of-the-filling\">Variations of the filling:<\/h4>\n\n\n\n<p>You can leave the purslane out and add fresh herbs. Spinach works in a pinch. Grilled shredded chicken is a great addition or even cooked minced meat.&nbsp;<\/p>\n\n\n\n<p>Go the traditional way and you don\u2019t need anything other than cheese.<\/p>\n\n\n\n<p>Give soft crumbled paneer a try, too. The only condition is that it has to be&nbsp;<em>freshly made<\/em>&nbsp;and soft.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-third-bake-the-khachapuri-georgian-cheese-bread\">Third, bake the Khachapuri \u2013 Georgian cheese bread<\/h3>\n\n\n\n<p>Once the dough has risen, punch it a few times and cut it into four pieces. Five minutes before the bread is done, you take it out, crack an egg, and put it back in the oven. You bake it just enough that the white solidifies and the yolk is deliciously runny.\u00a0<\/p>\n\n\n\n<p>For a completely&nbsp;<strong>vegan<\/strong>&nbsp;Georgian cheese bread, use plant-based cheese and butter. You can replace the butter with a drizzle of olive oil, too.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.tashasartisanfoods.com\/blog\/wp-content\/uploads\/2020\/05\/Khachapuri-Georgian-Cheese-Bread-8-1-796x1024.jpg\" alt=\"Khachapuri- Georgian Cheese Bread \" class=\"wp-image-11643\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-finally-serve-the-georgian-cheese-bread\">Finally, Serve the Georgian Cheese Bread<\/h2>\n\n\n\n<p>Khachapuri is best savored straight out of the oven.<\/p>\n\n\n\n<p>You tear off a piece, use it as a spoon to stir the melting pats of butter in the bubbling cheese, and then find bliss!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.tashasartisanfoods.com\/blog\/wp-content\/uploads\/2020\/05\/Khachapuri-Georgian-Cheese-Bread-5-1-811x1024.jpg\" alt=\"Khachapuri- Georgian Cheese Bread \" class=\"wp-image-11644\"\/><\/figure>\n\n\n\n<p>I made four bread boats and served them with a side of a light salad as a meal. The crust was exquisitely crispy and not one bit soggy \u2013 the bane of bread and cheese combos. I think it was because I didn\u2019t overstuff the bread with cheese as our love for cheese comes in moderation.\u00a0<\/p>\n\n\n\n<p>The deliciously light Georgian cheese bread is excellent as a snack too.
