If you don't have amaranth flour, you can leave it out and use all whole wheat, all-purpose, or a mix of both. <\/p>\n\n\n\n<p><strong>Butter -<\/strong> I used salted butter. Use a plant-based butter to make vegan apple cinnamon scones. You can even add coconut oil as long as it is chilled and solid.<\/p>\n\n\n\n<p><strong>Sugar-<\/strong> I used raw sugar, but regular white sugar or cane sugar will work well here.<\/p>\n\n\n\n<p><strong>Milk-<\/strong> Instead of milk, you can use regular cream or coconut cream. If you do so, as I did for my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/banana-bread-scones\/\">banana bread scones<\/a>, make sure the cream is chilled.\u00a0<\/p>\n\n\n\n<p><strong>Cranberries- <\/strong>Can be substituted with raisins or dates, or you can leave them out. Any nuts would pair well with the apple cranberry scones. Gently place on the prepared tray. But you can make a thick maple glaze and drizzle it on top using a piping bag. \u00a0<\/p>\n\n\n\n<p>Don't have maple syrup? Use a<strong> <\/strong>plain glaze made with icing sugar &amp; milk or a coffee glaze like used for my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/cinnamon-chocolate-chip-scones\/\">cinnamon chocolate chip scones<\/a>.<\/p>\n\n\n\n<h2 id=\"pro-tips\"   class=\"wp-block-heading\" >Pro Tips<\/h2>\n\n\n\n<p>A great scone doesn\u2019t have a bread-like texture. It has a \u2018short\u2019 crumbly texture that falls apart easily when you bite into it. Three things will make your scone hard and bread-like:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Too much water or moisture - the first trick to making a great scone is not to be tempted to add more liquid. The ingredients should be just well moistened. Don\u2019t worry; they will come together without effort.&nbsp;<\/li>\n\n\n\n<li>Over-zealous mixing or kneading- Kneading develops the gluten network, which you do not want. When you\u2019re adding the apples and cranberries, gently fold them in using your hands.<\/li>\n\n\n\n<li>Work quickly so that the butter doesn\u2019t melt. <em>Why is that important? <\/em>Because you want little pockets of butter in the scone dough. These pockets melt as the scones bake, creating openings, that makes the scone gorgeously cottony soft.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\"
