I\u2019ve baked them in a world of flavors. Seriously, from lavender to chocolate and everything in between.<\/p>\n\n\n\n<p>With Diwali knocking on our doors, I wanted to try them with Indian flavors. So, I sorta kinda took inspiration from my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/orange-semolina-almond-cake\/\">orange semolina almond cake<\/a> for the base and then built up from there.&nbsp;<\/p>\n\n\n\n<p>The combination of semolina (suji) and almond meal is always a winner. It is evaporated milk solids, also known as khoya. It is used copiously in Indian sweets.&nbsp;<\/p>\n\n\n\n<p>But I didn\u2019t feel like making an effort to either prepare it at home or buy it. These sponge cake-like treats are crispy and very light golden on the edges due to the semolina. Do not skip the step. To save time, you can always make the batter a day ahead as you can safely <strong>refrigerate it for up to a day.<\/strong><\/li>\n\n\n\n<li>I use <strong>silicone madeleine molds<\/strong>, so there is <strong>no need to grease<\/strong> them. If you have <strong>metal molds<\/strong>, please <strong>brush<\/strong> them <strong>liberally with oil or butter.<\/strong>&nbsp;<\/li>\n\n\n\n<li>Scoop or <strong>spoon<\/strong> the batter <strong>in the middle of the mold<\/strong>. But if you\u2019re looking for Diwali gifts or adding to your festive spread, try these variations:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Switch the pistachios with almonds, walnuts, or <strong>any other nut you lik<\/strong>e. Just remember to chop them finely.&nbsp;<\/li>\n\n\n\n<li><strong>Reduce the amount of cardamom<\/strong> to bring in a subtler taste.&nbsp;<\/li>\n\n\n\n<li><strong>Skip the saffron<\/strong> altogether.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-what-milk-should-you-use-for-the-madeleines\">What milk should you use for the madeleines?<\/h4>\n\n\n\n<p>I am partial to <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/diy-almond-milk\/\">homemade almond milk<\/a>, but <strong>any milk<\/strong> would do.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-can-you-use-butter-instead-of-coconut-oil\">Can you use butter instead of coconut oil?<\/h4>\n\n\n\n<p>Yes, you can. Just make sure you <strong>melt and then cool the butter.<\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-can-you-make-vegan-cardamom-pistachio-madeleines\">Can you make vegan cardamom pistachio madeleines?<\/h4>\n\n\n\n<p>I haven't tried the vegan version. But you could use a <strong>plant-based milk powder<\/strong> to make them vegan.<\/p>\n\n\n\n<p>Regular milk powder adds a richness to the madeleines - that decadent <em>mawa<\/em> savor. Subbing it will rob you of the festive flavors flowing through the madeleines.&nbsp;<\/p>\n\n\n\n<p>In case your heart is set on vegan madeleines, then try my vegan coffee hazelnut ones.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-what-if-you-don-t-have-madeleine-molds\">What if you don\u2019t have madeleine molds?<\/h4>\n\n\n\n<p><strong>Use mini-muffins or cupcake molds. <\/strong>The recipe fits them to the tee. The only difference will be the texture.
