But any milk\u2014dairy or plant-based (like <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/oat-milk\/\">oat milk<\/a> or <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/cashew-milk\/\">cashew milk<\/a>)\u2014works just fine.<\/p>\n\n\n\n<p><strong>Sugar<\/strong>: Regular granulated sugar is what I used here. Then stir in the sugar.<\/p>\n\n\n\n<p><strong>Step 2:<\/strong> In another bowl, whisk together the olive oil, almond milk, and vanilla extract. Use lukewarm (not hot) milk. How do you get that gorgeous bump in the French tea cakes? By <em>chilling <\/em>the batter. The cold solidifies the oil in the batter, which helps form the hump. <\/li>\n\n\n\n<li>I prefer silicone molds because you don\u2019t need to grease them. But if you\u2019re using metal madeleine molds, brush them liberally with butter or oil.<\/li>\n\n\n\n<li>To get that scalloped belly and shell-like top, fill the molds only 3\/4th of the way. Overfilling will give you delicious but misshapen madeleines.\u00a0<\/li>\n\n\n\n<li>Use a spoon to add the batter right in the middle of the mold. There is no need to even it out.<\/li>\n\n\n\n<li>Don\u2019t overbake the madeleines.
