Think of it as a jam substitute that wears a dozen other hats too, like filling for cakes or tarts.&nbsp;<\/p>\n\n\n\n<p>Typically, it uses citrus fruits like lemon. Nevertheless, I wanted to make it with what I consider a national treasure \u2013 mangoes. It\u2019s also the only time of the year when I quake to turn on the oven.<\/p>\n\n\n\n<p>This is why I loved making the homemade mango curd, a recipe that I adapted from <a href=\"https:\/\/domesticgothess.com\/\">Domestic Gothess<\/a>. I didn\u2019t need to crank up the oven in this combusting heat, and the cooking time was less than 4 minutes!&nbsp;&nbsp;<\/p>\n\n\n\n<p><strong>Step 1: <\/strong>Blitz chopped mangoes with coconut milk, sugar, cornstarch, and agar-agar in your blender till smooth. If you want, up the ante in the mango curd recipe by adding lemon juice.&nbsp;<\/p>\n\n\n\n<p><strong>Step 2: <\/strong>Pour the mixture into a saucepan placed over low heat. Keep in mind, that you can always add more sugar after blending.<\/li>\n\n\n\n<li>You can\u2019t taste the <strong>lemon juice<\/strong> in the creamy mango curd. Its acidity merely brightens the flavor. <strong>Omit it<\/strong>, if your mangoes have more notes of sour than sweet.&nbsp;<\/li>\n\n\n\n<li>For that silky, ultra-smooth texture, <strong>sieve the mixture.<\/strong>&nbsp;<\/li>\n\n\n\n<li>You don\u2019t want the curd to be undercooked, overcooked, or plain burnt. So, utilize <strong>a heavy-bottom pan and whisk, whisk, whisk<\/strong>. It\u2019s barely for a few minutes, so don\u2019t take your eyes off it. Let them dry and cool, and then transfer the eggless mango curd into them.&nbsp;<\/p>\n\n\n\n<p><strong>Option 2: <\/strong>Use soap and water to clean your jars. Rinse and then let them dry thoroughly in an oven heated to 120\u00b0C. Place them in your oven tray, with the lids kept separately, for about 10 to 15 minutes.&nbsp;<\/p>\n\n\n\n<p>Cool the jars before you add the vegan fruit curd. But trust me, it\u2019s even better when:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Topped on pavlova&nbsp;<\/li>\n\n\n\n<li>Blended in smoothies<\/li>\n\n\n\n<li>Spread on toasts, <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/strawberry-crepes\/\">cr\u00eapes<\/a>, and pancakes<\/li>\n\n\n\n<li>Spooned on muffins and <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/?s=scones\">scones<\/a><\/li>\n\n\n\n<li>Scooped on ice cream or even oatmeal<\/li>\n\n\n\n<li>Swirled into a regular bowl of yogurt for instant dessert<\/li>\n\n\n\n<li>Slathered between layers of <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/victoria-sponge-cake\/\">Victoria sponge cake<\/a>.
