How long it takes to bake them will depend upon their size.<\/li>\n\n\n\n<li>Bake the potatoes; don\u2019t boil them. It\u2019ll keep them starchy, which helps hold the dough together. <\/li>\n\n\n\n<li>You can steam them (unpeeled) in your microwave or stovetop if you like.\u00a0<\/li>\n\n\n\n<li>As soon as the potatoes are cool enough that you can handle them, peel them. You <em>don\u2019t<\/em> want them to get completely cold because then they clump together!<\/li>\n\n\n\n<li>Don't mash your potatoes using a food processor or a potato masher when making homemade gnocchi. You\u2019ll end up with a gummy mass. What you\u2019re looking for is light and fluffy gnocchi. That\u2019s why I recommend a grater or ricer. It helps aerate them. If you don\u2019t have either, use a fork.<\/li>\n\n\n\n<li>While grating or pressing, spread out the potato strands on the work surface so they don\u2019t stick to each other.<\/li>\n\n\n\n<li>The quantity of flour should always be <em>less than<\/em> the quantity of mashed potatoes. The trick I used was to add a bit and wait for it to be completely combined before sprinkling more.\u00a0<\/li>\n\n\n\n<li>Avoid overworking the dough. Else, it\u2019ll develop the gluten network, making the gnocchi hard and chewy.\u00a0<\/li>\n<\/ul>\n<\/div><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"how-to-serve\"   class=\"wp-block-heading\" ><strong>How To Serve<\/strong><\/h2>\n\n\n\n<p>Gnocchi is very versatile; it goes well with any sauce. Here are four of my favorites:<\/p>\n\n\n\n<p><strong>Tomato sauce:<\/strong> The <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/simple-tomato-sauce\/\">classic simple tomato sauce<\/a> clings to the ridges and makes for a hearty, satisfying meal.<\/p>\n\n\n\n<p><strong>Pesto:<\/strong> Toss warm gnocchi with store-bought or <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/pistachio-pesto\/\">homemade basil pesto<\/a> and a squeeze of lemon. Ready to eat in 5 minutes after the gnocchi is cooked!<\/p>\n\n\n\n<p><strong>Brown butter and sage:<\/strong> Heat butter in a pan until it turns golden and nutty. Add fresh sage leaves and cook until they are crispy. Toss the cooked gnocchi through and serve immediately. Dust them with flour and place on a greased or parchment paper-lined tray in a single layer. Cover tightly and refrigerate. You can also refrigerate cooked gnocchi a day before. Reheat briefly in the sauce.<\/p>\n\n\n\n<p><strong>Freeze:<\/strong> After shaping the gnocchi, place them on a tray and freeze for 2-3 hours. Then transfer the frozen gnocchi into a Ziplock and freeze them for later use.\u00a0<\/p>\n\n\n\n<p>Whenever you\u2019re ready to make the gnocchi, simply drop them into <em>simmering<\/em> water. You don\u2019t need to thaw them.&nbsp;&nbsp;<\/p>\n\n\n\n<p>I wouldn\u2019t recommend freezing <em>cooked <\/em>gnocchi. This recipe skips the eggs, making it fully vegan. Most store-bought gnocchi is also egg-free, but always check the label.\u00a0<br><\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1781600488402\"><strong class=\"schema-faq-question\">Why is my gnocchi gummy?<\/strong> <p class=\"schema-faq-answer\">It could be because there was too much flour in the dough or the potatoes were too wet. I started with 1.6 lbs \/ 730 g of potatoes, and after baking and peeling, they weighed 1.1 lbs\/ 500g. <strong>So this recipe uses 1.1 lbs \/ 500 g of cooked and peeled potatoes.<\/strong><\/li>\n<li>Pick potatoes of the same size so they bake evenly. How long it takes to bake them will depend on their size.<\/li>\n<li>Bake the potatoes; don\u2019t boil them. It\u2019ll keep them starchy, which helps hold the dough together.<\/li>\n<li>You can steam them (unpeeled) in your microwave or stovetop if you like.\u00a0<\/li>\n<li>As soon as the potatoes are cool enough that you can handle them, peel them. You <em>don\u2019t<\/em> want them to get completely cold because then they clump together!<\/li>\n<li>Don't mash your potatoes using a food processor or a potato masher when making homemade gnocchi. You\u2019ll end up with a gummy mass. What you\u2019re looking for is light and fluffy gnocchi. That\u2019s why I recommend a grater or ricer. It helps aerate them. If you don\u2019t have either, try a fork.<\/li>\n<li>While grating or pressing, spread out the potato strands on the work surface so they don\u2019t stick to each other.<\/li>\n<li>The quantity of flour should always be <em>less than<\/em> the quantity of mashed potatoes. The trick I used was to add a bit and wait for it to be completely combined before sprinkling more.\u00a0<\/li>\n<li>Avoid overworking the dough.
