Making the crust and the filling takes all of 15-20 minutes from start to finish, and there\u2019s not much technique to it. I did know it was not a fruit tart with puff pastry like my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/strawberry-puff-pastry-tart\/\">strawberry tart<\/a> or <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/cherry-puff-pastry-tart\/\">cherry tart<\/a>. So, I christened it an easy fruit tart, and it\u2019s a symphony for the senses.<\/p>\n\n\n\n<p>The exquisite balance of ripe juicy sweetness and bright acidity of the plums and apricots rounds out the soft, and sweet sponge cake filling. It\u2019s foolproof and one I recommend to novices as well as expert bakers if you want to learn the art of tart. You simply can\u2019t go wrong with it.<\/p>\n\n\n\n<p>Popina uses a unique style of making fruit tarts. The shell is a shortcrust pastry bursting with sponge cake filling and stone fruits. Then cut in the chilled butter using your fingertips (or a pastry cutter).<\/p>\n\n\n\n<p><strong>Step 2<\/strong>: When the mixture starts resembling coarse breadcrumbs, add chilled water, one tablespoon at a time. You won\u2019t need more than 3 or 4 of them.<\/p>\n\n\n\n<p><strong>Step 3:<\/strong> Bring together the scraggy dough. There are two ways you can go about it. <strong>Cube<\/strong> it in pieces while it\u2019s still soft and at room temperature, and <strong>then freeze<\/strong> and add it into the flour. Or you can take the easier route and <strong>freeze it first and then grate<\/strong> it into the flour.\u00a0<\/li>\n\n\n\n<li>If your tart shell dough feels <strong>dry, use more ice-cold water<\/strong> to moisten it.<\/li>\n\n\n\n<li>For those who prefer <strong>short-crust pastry with an egg<\/strong>, I recommend <strong>reducing<\/strong> the amount of <strong>water<\/strong> you use.&nbsp;<\/li>\n\n\n\n<li>A lump of butter here and there in the dough is perfectly fine. Don\u2019t panic if you see them.&nbsp;<\/li>\n\n\n\n<li><strong>Don\u2019t knead<\/strong> the dough, simply bring it together with your hands.&nbsp;<\/li>\n\n\n\n<li>It\u2019s a good <strong>make-ahead recipe<\/strong>. What is a stone fruit? Any fruit that has a seed right at the center, like cherries, peaches, plums, apricots, lychees, and mangoes. Since I love them, I stuck to plums and apricots.<\/p>\n\n\n\n<p>Don\u2019t want to bake an apricot tart or plum tart? Use <strong>grapes, apples, or an assortment of berries<\/strong>. Any fruit will do as long as you\u2019re not stingy with it.
