It's a traditional South Korean banchan (side dish) and an extremely popular snack.<\/p>\n\n\n\n<p>When made with baby potatoes, it\u2019s called algamja-jorim, as the potatoes resemble quail eggs. I couldn\u2019t get my hands on any, so I used <strong>regular<\/strong> potatoes.<\/p>\n\n\n\n<p>If you do, go ahead and make Korean soy-braised baby potatoes. You probably won\u2019t need to cut them. You may need to boil them before searing and braising. Be mindful that this will add to the cooking time.<\/p>\n\n\n\n<p><strong>Spices<\/strong>: Typically, a Korean braised potato recipe doesn\u2019t have <strong>gochujang,<\/strong> so feel free to <strong>omit it<\/strong>. I am obsessed with it, so in it went.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>You can use <strong>gochugaru<\/strong> (hot pepper powder) or any red chili powder or flake to spice it up.<\/li>\n\n\n\n<li><strong>Ginger<\/strong> would give the flavor profile new dimensions.<\/li>\n\n\n\n<li><a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/sambal-oelek\/\"><strong>Sambal oelek<\/strong><\/a> would add an interesting and flavorful twist to Korean braised potatoes if you enjoy a spicy kick.<\/li>\n<\/ul>\n\n\n\n<p><strong>Sweetener<\/strong>: Traditional Korean cooking calls for ssal-yeot (Korean <strong>rice syrup<\/strong>) or mul-yeot (<strong>corn syrup<\/strong>). I could not find either of them, so <strong>honey<\/strong> it was, and it worked really well, giving the sauce sticky love.<\/p>\n\n\n\n<p><strong>Salt<\/strong>: I <strong>didn\u2019t<\/strong> feel the need to <strong>add<\/strong> any salt because the soy sauce was already salty. That said, I strongly recommend tasting<strong> and adjusting<\/strong> as needed.<\/p>\n\n\n\n<p><strong>Toppings:<\/strong> <strong>Sesame seeds<\/strong> give the side dish a counterbalancing texture and taste. Nuttiness to the glaze\u2019s sweetness.
