Store-bought is fine, or you can make it at home like I did for my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/strawberry-lemon-bundt-cake\/\" target=\"_blank\" rel=\"noreferrer noopener\">soft and moist strawberry lemon bundt cake<\/a>.<\/p>\n\n\n\n<p><strong>Baking soda and powder <\/strong>are<strong><em> <\/em><\/strong>leavening agents that help the pancakes rise and have that fluffy, light texture we all love.<\/p>\n\n\n\n<p><strong>Eggs:<\/strong> Use room-temperature eggs, and your batter will mix more easily and smoothly. To make eggless pancakes, use <em>flax eggs<\/em> as I did in my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/eggless-chocolate-chip-cookies\/\" target=\"_blank\" rel=\"noreferrer noopener\">eggless chocolate chip cookies<\/a>!&nbsp;<\/p>\n\n\n\n<p><strong>Coconut Oil: <\/strong>If you prefer, you can substitute coconut oil with melted butter or any neutral-tasting vegetable oil.<\/p>\n\n\n\n<p><strong>Sugar:<\/strong> sweetens the batter and helps the pancakes caramelize and brown, giving them a nice golden color. Raw, cane, brown, or any sugar you prefer will do the job in a jiffy.
