Don't overmix and let the batter rest for 5-10 minutes.<\/p>\n\n\n\n<p><strong>Step 4:<\/strong> Heat a heavy-bottomed pan to about medium heat. Grease the pan well, and ladle in about 1\/4 cup of the homemade pumpkin pancake batter.<\/p>\n\n\n\n<p><strong>Optional step:<\/strong> Once the underside is almost cooked, sprinkle some chocolate chips.<\/p>\n\n\n\n<p><strong>Step 5:<\/strong> Flip when bubbles appear in the middle and the underside of the orange pumpkin pancake is browned.<\/p>\n\n\n\n<p><strong>Step 6:<\/strong> Cook for 1\u20132 minutes more on the other side.<\/p>\n\n\n\n<p><strong>Step 7:<\/strong> Repeat till you've used up all the pumpkin pie pancake batter.<\/p>\n\n\n\n<p><strong>Step 8:<\/strong> Stack up the pancakes. Top with walnuts and chocolate chips. Serve with maple syrup. If it\u2019s too thick, add some more coconut milk or orange juice to thin it down.<\/li>\n\n\n\n<li>The best way to\u00a0serve\u00a0these homemade pumpkin pancakes is to top the stack with some\u00a0walnuts and fresh orange zest,<strong>\u00a0<\/strong>and then drizzle\u00a0honey\u00a0or maple syrup. And the best part? You can make it ahead for these healthy pumpkin pancakes.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Peel and dice 500 grams of pumpkin. This yields 250 grams of pur\u00e9e.&nbsp;<\/li>\n\n\n\n<li>Steam in a saucepan with a tightly covered lid for about 20 minutes.&nbsp;<\/li>\n\n\n\n<li>Mash the pumpkin with a fork or blend it in your blender to get a smooth pur\u00e9e.<\/li>\n<\/ul>\n\n\n\n<p>I used the blender for this pancake recipe. The leftover pur\u00e9e can be added to\u00a0pumpkin cakes like this <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/pumpkin-sheet-cake\/\">pumpkin sheet cake<\/a>, <a
