I\u2019m so enamored by the combination of plum and cardamom that I\u2019ve made a popsicle out of it!<\/p>\n\n\n\n<p>The plum and cardamom muffins have all the joy of a sweet, satisfactory tea cake without any heaviness. So, they make for a great breakfast companion or healthy snack.<\/p>\n\n\n\n<p>Plus, making them is an absolutely hassle-free experience. You don\u2019t need any special technique or equipment \u2013 a bowl and some pantry ingredients do the trick. Threw in a handful of diced plums in the cardamom-vanilla-flavored batter, sprinkled some streusel, and topped with some more sliced plum. By the time I cleared the kitchen, these fellas were out of the oven. That quick!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-making-the-streusel-and-buttermilk\">Making the streusel and buttermilk<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>While your oven preheats, get the streusel ready by mixing a little bit of flour with sugar, cardamom powder, and coconut oil.&nbsp;<\/li>\n\n\n\n<li>When the mixture feels like wet sand, it\u2019s ready.&nbsp;<\/li>\n\n\n\n<li>To make buttermilk, mix vinegar with milk and then set it aside for around 5 to 6 minutes.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-quick-note\">Quick note:<\/h4>\n\n\n\n<p><strong>Buttermilk<\/strong> gives muffins more body and a soft, buttery texture. It is my <strong>secret<\/strong> <strong>to<\/strong> making <strong>moist muffin<\/strong>s. Don\u2019t skip it.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-making-the-muffin-batter\">Making the muffin batter<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>For the batter, sift baking powder, baking soda, salt, sugar, and more cardamom with the flours.&nbsp;<\/li>\n\n\n\n<li>Separately, whisk Greek yogurt,&nbsp;<a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/homemade-vanilla-extract\/\">vanilla extract, <\/a>and coconut oil with buttermilk.<\/li>\n\n\n\n<li>Mix the wet ingredients into the dry with a gentle hand and fold in diced plums with a spatula.&nbsp;<\/li>\n\n\n\n<li>Your batter should be thick, almost lumpy, and scraggy. And no, the muffins will not turn out to be dry with a cardboard-like taste. The plums release their juices as they bake, turning the crumb superbly juicy and jammy.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-quick-note-0\">Quick note:<\/h4>\n\n\n\n<p>No matter what&nbsp;<strong>add-ins<\/strong>&nbsp;your muffin recipe has,&nbsp;<strong>always fold&nbsp;<\/strong>them in&nbsp;<strong>gently<\/strong>. That\u2019s the trick to a soft interior.<\/p>\n\n\n\n<p>Also,&nbsp;<strong>never overmix the batter<\/strong>. When everything looks well moistened, stop mixing.&nbsp;<\/p>\n\n\n\n<p>Greek yogurt does excellent work at making the batter viscous, lending the muffins the iconic crown.&nbsp;<strong>If you use regular yogurt, strain it<\/strong>&nbsp;until it\u2019s nicely thick.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-baking-the-plum-and-cardamom-muffins\">Baking the plum and cardamom muffins<\/h3>\n\n\n\n<p>Muffin batter comes together super-fast. Once it does, don\u2019t dawdle.&nbsp;<strong>Immediately put it for baking<\/strong>. Keep the batter hanging, and the leavening agents, along with buttermilk and Greek yogurt, lose their efficacy. You don\u2019t want that chemical chain reaction to fizz out.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pour the batter into your lined muffin tray.&nbsp;<\/li>\n\n\n\n<li>Sprinkle the streusel and really jam it in liberally. I wish I had gone heavy with it, but there\u2019s always the next time.&nbsp;<\/li>\n\n\n\n<li>Top the batter with slices of plum and then bake for 20 to 22 minutes.&nbsp;<\/li>\n\n\n\n<li>Do a skewer test. It should come out clean with only a few moist crumbs attached.&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-tips-for-baking-muffins\">Tips for baking muffins<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>For a mess-free clean-up, always <strong>line the muffin cups<\/strong> with paper or silicone cups. <strong>Or<\/strong> you can <strong>grease them<\/strong> with a heavy hand.&nbsp;<\/li>\n\n\n\n<li>If the batter is not sufficient to fill all the muffin cups, <strong>pour water into the empty ones.<\/strong> It\u2019ll make sure they don\u2019t burn. The water should be enough to fill half of each cavity.<\/li>\n\n\n\n<li>No one loves a muffin with a soggy bottom. The bright and fresh muffins will stop you in your tracks and savor each bite.<\/p>\n\n\n\n<p>While they are best eaten the day they are baked, because of all that fruit in the batter, they stay (refrigerated) perfectly moist the next day as well.&nbsp; I happily tucked in one for breakfast as well because of the low sugar and healthy flours.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-variations-of-plum-cardamom-muffin-recipe\">Variations of plum cardamom muffin recipe<\/h2>\n\n\n\n<p>As I said, the recipe is basic. The latter lends more texture and, of course, makes the muffin a touch healthier.<\/p>\n\n\n\n<p>You can use <strong>100% all-purpose<\/strong>, <strong>100% whole wheat, or go half and half.<\/strong> <strong>Substitutes for amaranth flour<\/strong> are:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Buckwheat flour<\/li>\n\n\n\n<li>Almond flour<\/li>\n\n\n\n<li>Oat flour<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-is-butter-or-oil-better-for-muffins\">Is butter or oil better for muffins?<\/h3>\n\n\n\n<p>Both work equally well. I used coconut oil, but you can use any neutral-tasting oil. I\u2019m just partial to coconut milk.
