Make the homemade pancakes with any flour of your choice \u2014 all-purpose flour,&nbsp;buckwheat,&nbsp;or ragi (finger millet flour). You really can't go wrong!<\/p>\n\n\n\n<p><strong>Cinnamon<\/strong>: If you\u2019re simply hankering for plain fluffy pancakes, leave the cinnamon out and just make vanilla-flavored pancakes. Or add some lemon or orange zest.<\/p>\n\n\n\n<p><strong>Yogurt<\/strong>: Don't have Greek yogurt? Drain homemade yogurt for a few minutes to get rid of excess liquid and use that.<\/p>\n\n\n\n<p><strong>With eggs:<\/strong> This is an eggless cinnamon pancake recipe. Yes, you can add eggs to it, and the pancakes will still come out fluffy, soft, and moist. Simply swap yogurt for eggs. I\u2019ve even made fluffy cinnamon pancakes with both eggs and yogurt.<\/p>\n\n\n\n<p><strong>Milk<\/strong>: I'm lactose intolerant; that\u2019s why I used coconut milk. Soy or&nbsp;<a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/diy-almond-milk\/\">homemade almond&nbsp;milk<\/a> will work too. If I'm not eating the homemade pancakes, I make them with regular milk.<\/p>\n\n\n\n<p><strong>Add-ins:<\/strong> These pancakes with cinnamon are delicious with:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>A handful of chocolate chips<\/li>\n\n\n\n<li>Banana - like in my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/glutenfree-banana-pancakes\/\">gluten-free banana pancakes<\/a><\/li>\n\n\n\n<li>Blueberries<\/li>\n\n\n\n<li>Apples - like in my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/apple-pancake-recipe\/\">apple pancakes<\/a><\/li>\n<\/ul>\n\n\n\n<p>You can even add a teaspoon or two of coffee powder, cocoa, or both to this fluffy pancake recipe. Or stir in a nice fruit preserve.<\/p>\n<\/div><\/div>\n\n\n\n<h2 id=\"how-to-make-cinnamon-pancakes\"   class=\"wp-block-heading\" >How To Make Cinnamon Pancakes?<\/h2>\n\n\n\n<p><strong>Step 1:<\/strong> Sift and mix flour, baking powder, baking soda, and salt in a small bowl. Add&nbsp;cinnamon powder.<\/p>\n\n\n\n<p><strong>Step 2:<\/strong> Whisk the milk, oil, yogurt, and&nbsp;<a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/homemade-vanilla-extract\/\" target=\"_blank\" rel=\"noreferrer noopener\">vanilla extract<\/a>&nbsp;in a separate bowl.<\/p>\n\n\n\n<p><strong>Step 3<\/strong>: Pour the wet ingredients into the dry and combine till you have a smooth, lump-free, thick cinnamon pancake mix.<\/p>\n\n\n\n<p><strong>Step 4<\/strong>: Heat a griddle and grease it. Adjust it to <strong>suit your taste<\/strong>\u2014a stronger or milder hint of cinnamon.
