And now it's one of my favorite quick desserts to play around with! Feel free to use any kind you like - all-purpose, whole wheat, oat, quinoa, or even almond flour will work. Or add a mix like I did for my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/pumpkin-oats-madeleines\/\">pumpkin madeleines<\/a>.<\/p>\n\n\n\n<p><strong>Sugar:<\/strong> I had coconut sugar on hand, so that's what went in. You can easily swap with brown sugar, regular sugar, honey, or even maple syrup will be good in this pumpkin mug cake recipe.<\/p>\n\n\n\n<p><strong>Pumpkin puree:<\/strong> It adds plenty of natural sweetness and also keeps the mug cake so moist. Canned or homemade puree can be used. I always have some homemade pumpkin puree in my freezer, so I can whip up pumpkin treats like this <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/pumpkin-chocolate-swirl-cake-w-orange-cream-cheese-frosting\/\">pumpkin swirl cake<\/a> and <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/easy-pumpkin-bread\/\">pumpkin bread<\/a> in no time!<\/p>\n\n\n\n<p><strong>Oil:<\/strong> I like to use coconut oil for my baking, but you can substitute it with any neutral-tasting oil.<\/p>\n\n\n\n<p><strong>Pumpkin pie spice:<\/strong> For that lovely warm flavor. If you don't have it, you can use cinnamon powder in a pinch!<\/p>\n\n\n\n<p><strong>Peanut butter:<\/strong> It adds richness and makes the eggless pumpkin mug cake oh so gooey!<\/p>\n\n\n\n<p><em>Please see the recipe card below for full information about the ingredients and quantities.<\/em><\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"how-to-make-pumpkin-mug-cake\"   class=\"wp-block-heading\" >How To Make Pumpkin Mug Cake<\/h2>\n\n\n\n<p><strong>Step 1:<\/strong> In a small bowl, add the buckwheat flour, baking powder, baking soda, salt, sugar, and pumpkin pie spice.<\/p>\n\n\n\n<p><strong>Step 2:<\/strong> Stir in the milk, oil, pumpkin puree, and peanut butter.\u00a0<\/p>\n\n\n\n<p><strong>Step 3:<\/strong> Fold in the chocolate chips.<\/p>\n\n\n\n<p><strong>Step 4:<\/strong> Transfer the batter to a ramekin. Top with more chocolate chips. Every microwave is different, so start checking at 1 minute 15 seconds.<\/li>\n\n\n\n<li>Let the cake rest for 30 seconds before digging in.<\/li>\n\n\n\n<li>I prefer to make eggless mug cakes. It saves me the bother of looking for a small egg\u00a0 (that's what works well in these little cakes, according to my experience) and also ensures that the cake doesn't overflow.<\/li>\n\n\n\n<li>If your batter feels too thick, add one or two tablespoons of milk. The batter should be thick and have a soft-dropping consistency.<\/li>\n\n\n\n<li>Place a small plate under the ramekin to catch any overflow.<\/li>\n<\/ul>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"can-pumpkin-mug-cake-be-made-in-an-oven\"   class=\"wp-block-heading\" >Can Pumpkin Mug Cake Be Made In An Oven<\/h2>\n\n\n\n<p>No microwave? No problem!<\/p>\n\n\n\n<p>You can easily bake this in a conventional oven.
