So have been the oversized oatmeal cookies that I can never seem to bake enough. (I kid you not, the cookie jar is half empty within hours!)<\/p>\n\n\n\n<p>With Christmas in the offing, I thought, \"<em>Why not mix my two loves?<\/em>\" Let\u2019s gingerize the oatmeal. Mix gently, but thoroughly.<\/p>\n\n\n\n<p><strong>Step 6:<\/strong> Fold in the cranberries, and then chill the dough for a couple of minutes so it\u2019s easier to handle.<\/p>\n\n\n\n<p><strong>Step 7:<\/strong> Roll the oatmeal cookies with cranberries into even-sized balls. I\u2019ve baked these cranberry Christmas cookies enough times to know that there\u2019s only a slight chance that you\u2019ll have to chill them.<\/li>\n\n\n\n<li>Hot out of the oven, the chewy oatmeal cranberry cookies will feel a little underbaked on top. Don\u2019t worry. I rhapsodize about it to no end, and hey, you get another scrumptious recipe for the season!<\/p>\n\n\n\n<p><strong>Milk<\/strong>: I prefer baking dairy-free treats, so soy milk was my choice.
