But the failures (undercooked, overcooked, and burnt besan) are devastating. Here\u2019s the trick to making a besan barfi that <em>satisfies the soul.<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Roast on <strong>low-medium heat.<\/strong> At high heat, besan burns or roasts inconsistently.<\/li>\n\n\n\n<li>Besan lumps; use your wooden spoon or spatula to break them.<\/li>\n\n\n\n<li><strong>Be patient.<\/strong> It\u2019ll take 10\u201315 minutes for besan to be gloriously fragrant and lightly browned.<\/li>\n<\/ul>\n\n\n\n<p>This is the most important step in all besan sweets recipes. I prefer the latter (<strong>finer gram flour<\/strong>), as it gives the burfi a fudgier mouthfeel.<\/p>\n\n\n\n<p><strong>Ghee<\/strong>: Homemade or store-bought; use what\u2019s convenient for you.<\/p>\n\n\n\n<p><strong>Sugar<\/strong>: <strong>Powdered<\/strong> sugar is what I used. <strong>Caster<\/strong> sugar will do. So will <strong>jaggery<\/strong>, although your barfi will have a darker hue, like my <a href=\"https:\/\/www.tashasartisanfoods.com\/blog\/besan-ladoo\/\">besan laddo<\/a>.<\/p>\n\n\n\n<p><strong>Milk <\/strong>is <strong>not essential<\/strong> from a structural perspective. It\u2019s to get the consistency right. If the mixture feels too dry, add a tablespoon or two of milk, one at a time. Mix it in after step 3 of the besan barfi recipe.<\/p>\n\n\n\n<p><strong>Cardamom<\/strong>: Every Indian mithai I make must have cardamom powder. That\u2019s just how my taste buds see it. You <strong>can omit <\/strong>it. The burfi will still be delicious.<\/p>\n\n\n\n<p><strong>Nuts<\/strong>: It\u2019s Diwali, so a little nutty decor is a necessity.
