Ingredients
3Tomatoes, cut into chunks
3medium Cucumbers, sliced thickly
1smallOnion, thinly slicedMarinate this in 1 tbsp red wine vinegar for at least an hour, if possible
12-15OlivesAdd more if you like.
1/3cupFeta Cheese, cut into cubesAdd more if you like.
1Avocado, cut into cubesOPTIONAL
Salad dressing
1TbspLemon juice
1TbspRed wine vinegar
2Tbsp Extra virgin Olive oil
1tspDried oregano
1/2tsphoneyOPTIONAL
Salt & Pepper to taste
Garnish
Fresh mint leavesOPTIONAL
Dried oregano
Instructions
Place the tomatoes, onions ( without the vinegar in which they were soaked), cucumbers and avocado ( if using) in a large shallow bowl.
Pour the dressing over the vegetables. Give it a GENTLE stir. Top with the olives and feta cheese. Garnish with fresh mint leaves and dried oregano. Serve chilled or at room temperature. Enjoy!

Whisk all the dressing ingredients in a small bowl. Taste and adjust for seasoning.
