Super easy to make, these Coffee Granola Bliss Balls will fuel you up and how! Shot of caffeine with protein rich almond butter all rolled with homemade granola make the yummiest energy bites. Perfect for breakfast, pre work out or a mid day snack!

Ingredients
2.5cupsGranola, homemadeYou can use any good quality store bought granola or muesli
2tbspCoconut oil
1tbsp, heapedAlmond butter
10Dates, pitted and soaked in warm water for 5 minutes
1tspCoffee powder
1tspcinnamon powder
1/4cupDairy free chocolate or Dark chocolate (70%) chipsOptional
2-3tbspAlmond Meal or Ground AlmondsOptional, for rolling the bliss balls
Instructions
Place all the ingredients - granola, coconut oil, almond butter, coffee powder, cinnamon and dates ( without their water) in a blender. Blend until well combined. If the mixture is too dry, add water in which dates were soaked, a teaspoon at a time until you get a sticky dough like consistency.
Mix in chocolate chips, if using. I like to refrigerate the dough for 15-20 minutes. This makes rolling the balls easier. Once the dough is chilled a bit, roll into even sized balls. Coat with ground almonds, if using and store in an airtight container in the refrigerator.
