Instructions
In a small bowl, whisk together the cashew milk, chia seeds, oats, vanilla and cocoa powder. Cover and store overnight in the refrigerator.
Next morning, blend everything (except yogurt) along with the dates together in your blender. Taste and adjust for sweetness. Add more cashew milk if the pudding is too thick for you.
Spoon in the pudding in a bowl/glass. Add a couple tablespoons of yogurt ( if using), then another layer of the pudding. Top with fruits/nuts/ seeds of your choice. Serve chilled.
