This recipe for Baked Sweet Potato is super easy to put together!

~ Scrub the sweet potatoes well.  ~ Rub oil on them & prick all over with a fork

Bake for 40-50 mins. The bigger the sweet potato, the longer it takes to cook!

Pierce with a sharp knife in the thickest part of the potato to check if they are cooked through. The knife should go in without any resistance!

Let cool for 5-7 minutes, cut the top with a knife, sprinkle salt & pepper. 

Add fillings of your choice! I used:  – Mashed Avocado – Roasted Chickpeas – Cashew Ricotta Cheese  – Microgreens – Spring onion, finely chopped – Green / red chillies
