– All-purpose flour – Almond flour – Baking powder – Butter, softened – Powdered sugar – Eggs – Ricotta cheese – 1 tsp Vanilla extract
– Sift together the flours & baking powder in a bowl – In another bowl, beat butter & sugar until pale & fluffy. - Then add the egg!
– Now add in the ricotta, vanilla extract & almond extract. Mix well. – Scoop & roll dough balls & place on the tray.
- Bake at 180 C for 12-14 minutes until light golden in color. Serve as is or glaze the cookies with almond glaze & add sprinkles!
