Combine the mango, coconut milk, sugar, cornstarch, agar-agar & lemon juice in a blender till smooth.
Pour into a saucepan & cook the mixture for 4-5 mins just until it thickens & starts to come to a gentle simmer.
Take it off the heat & whisk in the coconut oil!
Strain the curd to make sure there are no lumps remaining.
Cool to room temperature, transfer to a jar & then refrigerate!
Serve & enjoy!
