This easy Vegan Mango Curd  is rich, almost buttery & bursting with fresh flavour! Add it to smoothies, toast, pancakes, yogurt, ice cream, oatmeal & more. 

– Mango – Coconut milk – Sugar – Cornstarch – Agar-agar – Lemon juice – Coconut oil


Step 1

Combine the mango, coconut milk, sugar, cornstarch, agar-agar & lemon juice in a blender till smooth.

Pour into a saucepan & cook the mixture for 4-5 mins just until it thickens & starts to come to a gentle simmer.

Step 3

Take it off the heat &  whisk in the coconut oil!

Step 4

Strain the curd to make sure there are no lumps remaining.

Cool to room temperature, transfer to a jar & then refrigerate!
