Creamy Cucumber Salad With Greek Yogurt
This quick and super easy creamy cucumber salad is the perfect refreshing summer salad for your next barbecue or get-together. I made it with Greek yogurt, so it’s healthier, crunchy, crispy, and plenty creamy!

Instructions
Peel and thinly slice the cucumbers.
Thinly slice the onion and finely chop the dill and parsley.
Place the cucumbers, onions, dill, and parsley in a large bowl.
Spoon over the dressing and mix well.
Transfer to a serving bowl, and top with chopped parsley and crushed peanuts.
Serve immediately. Enjoy!
Dressing
Combine the yogurt, minced garlic, red wine vinegar, sugar, salt, and pepper in a small bowl. Whisk well. Taste and adjust for seasoning.
