These apple cinnamon blondiesare soft, chewy, and buttery. With a delicious caramel-like flavor and packed with fresh, sweet apples, these blondies are a wonderful fall dessert!
Preheat the oven to 180 C / 350 F. Line an 8" pan with parchment paper.
In a large bowl, combine melted butter and brown sugar. Whisk well until combined.2/3 cup Butter, melted, 1 cup Brown sugar
Add the egg, egg yolk, and vanilla extract.1 Egg, 1 Egg yolk, 1 tsp Vanilla extract
Add the dry ingredients - flour, baking powder, cinnamon, and salt.Mix until just combined. This is a thick batter.1.5 cups All-purpose flour, 1 tsp Cinnamon, 1.5 tsp Baking powder, 1/4 tsp Salt
Toss the diced apples with flour and fold into the batter.1 large Apple, 1 tsp All-purpose flour
Transfer the batter to the prepared pan and evenly spread it, smoothing out the top. Sprinkle some extra apple pieces on top if you want.
Bake at 180 C/ 350 F for 25- 30 minutes until the top is golden brown, and a toothpick inserted in the center comes out with a few moist crumbs attached.
Allow to cool before cutting into squares. Enjoy!

For the best chewy and tender texture, don’t overmix the batter.
Toss the diced apples with a spoonful of flour so they don't sink to the bottom of the blondies.
You can sprinkle cinnamon sugar on top of the batter before baking for extra crunch.
Don't overbake the blondies. Take them out of the oven when the top looks done, and the center is still a little soft. A toothpick inserted in the center should come out with a few moist crumbs attached. If the toothpick comes out clean, the apple blondies are overbaked!
Line the baking pan with parchment paper for easier clean-up.
Allow the cinnamon apple blondies to cool completely before slicing them.
