Recipe Ingredients

Flour: Regular all-purpose flour gives these apple blondies the best soft texture.
Butter: I used unsalted butter in this recipe. If using salted butter, omit the salt in the batter. We melt the butter for that wonderfully chewy texture. For an extra nutty flavor, you can also use browned butter as I did for my gingerbread madeleines.
Apple: Use any crisp, juicy, sweet apple variety that's easily available to you. I used Gala, but Honeycrisp, Fuji, Golden Delicious, Pink Lady - all will work.
Cinnamon: For that cozy, warm flavor that goes so well with apples!
Sugar: I used brown sugar for a caramel-like flavor. Light brown sugar will also work well here.
Vanilla extract: For rounding up the flavors. Use good-quality store-bought or homemade vanilla extract.
Egg: This apple blondie recipe uses 1 large egg plus an extra yolk. The extra yolk is the secret to making richer, chewier blondies, as I did for my chocolate chip coffee blondies.

Step-By-Step Instructions

Step 1: Combine melted butter and brown sugar in a large bowl. Whisk well until combined.

Step 2: Add the egg, egg yolk, and vanilla extract. Mix well.

Step 3: Add the flour, cinnamon, baking powder, and salt. Mix until just combined.

Step 4: Toss the apples with a spoonful of flour and fold them into the batter.

Step 5: Transfer the batter to the prepared 8-inch pan. Spread it evenly and smooth out the top. Top with more diced apples if you wish.

Step 6: Bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs attached.
Step 7: Let the cinnamon apple blondies cool completely before slicing them. Serve warm or at room temperature.
