Melt the chocolate gently over a double boiler or in a microwave. Stir well. Let it cool a bit before adding it to the other ingredients. This is very important, or your mousse will be grainy.
Meanwhile, combine the avocado, coconut milk, sea salt, and maple syrup in a blender or food processor. Blend until completely smooth.
Now slowly add the melted chocolate and rerun the blender until everything is combined well. Taste and adjust for sweetness.
You can add more liquid as well at this point if the mixture is too thick. The mousse will thicken more in the refrigerator.
Divide the mousse into your serving cups, and garnish with berries and chocolate shavings. Serve immediately or refrigerate for 1 - 2 hours for a firmer texture. You can serve it cold or bring it to room temperature.Enjoy!

Make sure avocado and coconut milk are at room temperature. We want all ingredients to be at a similar temperature so the mousse is smooth and not grainy at all.
In case your chocolate avocado mixture is too thick, you can add some more coconut milk, one tablespoon at a time. This mousse does firm up considerably in the fridge.
This avocado mousse doesn't need much time to set. You can enjoy it right away or set it in the refrigerator if you prefer a firmer texture.
