Besan halwa is the most popular Indian halwa. It’s one of the Indian sweets you’ll find in every household. Bursting with notes of cardamom, besan ka halwa is soft, rich, and has a texture that melts in the mouth.
Heat a kadai or a thick bottomed pan, add the besan. Dry roast it on medium -low heat for 4-5 minutes.
Now add the ghee. Continue roasting on low flame, until the chickpea flour is golden brown and smells nutty. You have to keep stirring so the mixture doesn't burn.This can take about 15-20 minutes.
In the meanwhile, combine the sugar, water, and crushed cardamom seeds in a saucepan and bring all to a boil. Lower the heat and let it simmer for another 4-5 minutes. Take it off the heat.
Slowly and carefully add to the sugar mixture. There will be a lot of spluttering. Keep stirring as the besan will start to absorb the water and thicken up.Tip: You can turn the heat off before adding water to the besan mixture.
Keep stirring on low heat till the mixture is thick and starts leaving the sides of the pan. Sprinkle with ghee-roasted almonds and cashews. Serve hot. Enjoy!
