These creamy coconut mango popsiclesare the ultimate summer treat! Bursting with fresh fruity tropical flavors, these dreamy popsicles need just 4 ingredients and are prepped in 15 minutes!
Blend the coconut milk, vanilla extract, and maple syrup. Taste and adjust for sweetness.
Use a quarter of this mixture to puree the diced mangoes.
Pour this mango mixture a quarter of the way through in your molds. Put this in the freezer for about 30 minutes. Add a quarter of the coconut mixture on top of the frozen mango mixture. Freeze for 30 minutes. Alternate this way till both the mixtures are used up.
Freeze the layered popsicles for 8-10 hours.
Unmold and enjoy!
Notes
Use ripe mangoes. The sweeter the mangoes, the better the flavor. It also means you’ll need less added sweetener.
Make popsicles overnight. Trust me, it’s the easiest way to avoid checking the freezer every hour (we’ve all done it). Just prep them in the evening, and they’ll be ready to enjoy the next day
