These easy puff pastry apple donuts are a delicious fall treat! With just 4 simple ingredients and a quick prep, you'll have golden, flaky pastries filled with cinnamon-coated soft apples, perfect for dessert or breakfast!
Preheat your oven to 190 C/ 375 F. Line a baking tray with parchment paper.
Allow your puff pastry to sit at room temperature for 10-15 minutes.
Cut your apples into rings, using a sharp knife. They should be about 1/4" thick. You should get about 12 slices.
Use a small cookie cutter to cut out the core from the apples, to make a ring shape.
Mix the sugar and cinnamon powder in a bowl. This is your cinnamon sugar.
On a lightly floured surface, roll out the puff pastry into a rough rectangle. Cut into 1/2" strips.
Assemble the apple rings- Dip each apple ring in the cinnamon sugar mixture and then wrap with the pastry strip. Repeat with the remaining apple rings.
Place the pastry-wrapped apple rings on the prepared baking tray. Brush with the egg wash and sprinkle some cinnamon sugar on top.
Bake at 190 C / 375 F for 20-25 minutes until the pastry is golden brown. Begin checking after the 15-minute mark, as all oven times vary.
Allow the pastries to cool for 5-10 minutes, serve warm, and enjoy!

These puff pastry apple donuts are best eaten the day they are made. Store any leftovers in an air-tight container in the refrigerator for 3 days.
Reheat the pastry donuts in an air-fryer or oven. Microwave will make the pastry soggy.
If the puff pastry gets too soft, pop it back in the fridge for a few minutes.
When wrapping the apple rings with puff pastry, you can wrap tightly for a fully covered look or leave small gaps so the apple peeks through. Both work beautifully!
If you're assembling the apple pastries ahead of time, don't dip them in cinnamon sugar before warpping as that will make the apples watery and the pie crust soggy.
Also, keep the assembled pastries in the refrigerator for no more than 4-5 hours.
