Pomegranate Mojito
Cool, fresh and crisp this Pomegranate Mojito is a fabulous summer cocktail! I particularly love how sparkly and festive it looks!

Instructions
Place the pomegranate seeds, lemon slices, mint leaves, and sugar in a glass.
Use a spoon or muddler to muddle to extract the juices and release oil from the mint.
Stir in the lime/lemon juice and white rum.
Add ice and top with club soda.
Garnish with mint leaves and some pomegranate seeds. Serve immediately. Enjoy!
Notes
Serve the pomegranate mojito as soon as it's made. You don't want the ice melting and diluting the drink.
You can mix in some pomegranate juice if you want a stronger pomegranate flavor.
Please use fresh lime/lemon juice and fresh mint for the best flavor!
Remember not to muddle the mint leaves too much..just enough to release their lovely flavor.
You can easily substitute sugar with honey in this recipe for a lovely floral note or use a simple syrup.
If you don't have a muddler, like me, a spoon will do the trick just as well.
