    Pomegranate Mojito

    Cool, fresh and crisp this Pomegranate Mojito is a fabulous summer cocktail! I particularly love how sparkly and festive it looks!

    I really enjoy mojitos. Really what's not to love? They are so refreshing with a lovely mint flavor and that lemon juice really brightens them up. Just a perfect match with white rum. Add some fresh pomegranate to the mix and you have a beautiful showstopper of a cocktail!

    How Can I Make This Cocktail

    The recipe for this Pomegranate Mojito is just as simple as it can get. I just muddled some pomegranate arils, fresh mint leaves, sugar and lemon slices along with the rum in a glass. Remember not to muddle the mint leaves too much..just enough to release their lovely flavor.

    At this point, you can strain the mixture into another glass ( I didn't bother with this step) and top it with ice and some club soda. Since my pomegranates were quite juicy and sweet, I didn't feel the need to use much sugar in this recipe. Not a big fan of sweet cocktails anyways!

    You can easily substitute sugar with honey in this recipe for a lovely floral note.

    This recipe can also be made a pitcher when you're entertaining a large crowd. Muddle the pom with mint, lemon, rum, and sugar in a pitcher instead of a glass. It's a good idea to serve the mojito right away as soon as you add the ice as you don't want it to melt and dilute your drink.

     And by the way, if you don't have a muddler, like me, a spoon will do the trick just as well.

    Like all cocktail recipes, this one is also very accommodating. Add more rum if you like, or more sugar. As much or as little mint as you prefer. And oh, did I tell you, leave the rum out and you'll have a delicious mocktail!?! That's what I made for my mom and kids. A little bit of sparkle is nice to make a Friday evening special!

    Mojitos are also very versatile. Add some berries if you want. Mangoes, peaches, cherries, would be lovely in here.

    I think next on my list is a spicy version though. I'm thinking strawberries or orange with red chilli....stay tuned for that one!

    Pomegranate Mojito

    Ingredients

    • 2-3 tbsp Pomegranate arils/ seeds Plus more for garnish
    • 6 Fresh mint leaves Plus more for garnish
    • 1/2 - 3/4 tsp sugar
    • 3-4 slices Lemon
    • 50 ml White Rum
    • 1/2 cup Club Soda You may need more
    • 5-6 cubes Ice You may need more

    Instructions

    • Place the pomegranate seeds, lemon slices, mint leaves, and sugar in a glass. Use a spoon or muddler to muddle to extract the juices and release oil from the mint.
    • Stir in the white rum. Pour into a glass with ice. Top with some club soda. Garnish with mint leaves and some pomegranate seeds. Serve immediately. Enjoy!

      That's definitely a show stopper and I love Mojito but non alcoholic ones 🙂
