So this Cashew Chocolate Chia Pudding happened the other day. I'm still not sure if I ate dessert for breakfast or was it breakfast for dessert?! I think it worked beautifully, either way, I mean if you're into deeply chocolatey, luscious pudding kind of treats! 🙂
I think by now you all are familiar with my affinity for chia puddings. I can eat them every day plain, or flavored, doesn't matter. It also helps that chia seeds are amazingly healthy. You can read more about their merits here. Now if for some reason you can't find chia seeds, do go ahead and opt for our local sabja or sweet basil seeds. They come with their health benefits and I do use them a lot. Keep in mind, that they will swell up more than chia. You may have to adjust the quantity used accordingly.
I have to admit, I've never tried chia pudding blended before. And it turned out really wonderfully creamy. You do have to use a little extra liquid to make sure the texture doesn't get gloopy. I suggest that for even the unblended ones. However, if you're in a rush or just can't be bothered to blend, go ahead and eat it as is. It still tastes marvelous!
Isn't it amazing that you can have a fabulous nutrient-rich breakfast waiting for you just with five minutes worth of prep the night before? Or you could make it in the morning for a lovely dessert to be enjoyed later in the day! 🙂

Cashew Chocolate Chia Pudding
Ingredients
- 1.5 cup Cashew milk You may need more.
- 1.5 tbsp Chia seeds
- 1.5 Tbsp Oats
- 1 tbsp Cocoa powder
- 1 tsp Vanilla extract
- 4-5 Dates
- 4-5 Tbsp Greek yogurt, plain ( for layering, optional) Use plant based yogurt if you want to keep it vegan.
- Fruits/ Nuts/ Seeds For topping
Instructions
- In a small bowl, whisk together the cashew milk, chia seeds, oats, vanilla and cocoa powder. Cover and store overnight in the refrigerator.
- Next morning, blend everything (except yogurt) along with the dates together in your blender. Taste and adjust for sweetness. Add more cashew milk if the pudding is too thick for you.
- Spoon in the pudding in a bowl/glass. Add a couple tablespoons of yogurt ( if using), then another layer of the pudding. Top with fruits/nuts/ seeds of your choice. Serve chilled.

Oats should be powdered or whole oats can be used ? I am asking for cashew chocolate chia pudding

Hi Nikita, it doesn't matter in this recipe as everything is getting blended the next morning. And even if you don't blend it, the oats will be very soft as they are getting soaked all night. Hope this helps.
