A long day’s work in a blistering hot kitchen, calls for a chilled glass of refreshing cold-brewed Peach Iced Tea! Infused with fresh peaches, this simple 4 ingredient recipe is just perfect for our scorching days!
Yes, I said cold brewed ! So in this recipe, instead of using tea bags or brewing tea leaves in boiling hot water, you simply steep the tea in a pitcher of water overnight. Next morning, stir in peach infused syrup, some mint/basil leaves and enjoy your Peach Iced Tea all day long!
This method of making iced tea is new to me, but I’ve really taken to it. You can read more about cold brewed teas in this wonderful article by BONAPPETIT.
Making this from scratch couldn’t be simpler. The amount of sugar you want to add is totally up to you. Its free from all the nasties from a powdered pack or a bottled version. Its healthier, fresher and cleaner. And environmentally friendly, think of all the plastic bags or bottles you didn’t use!
You get the wonderful flavour of the tea you’re using and the fruits you’ve added on. For the classic iced tea, all you need to do is add honey and some lemon juice to the cold brewed tea. Its sublime! Take my word for it.
The tea I’ve used here is from Glendale Estate in Nilgiris ( Tamil Nadu). A dear friend gifted a big bag of this beautiful tea and educated me about using it too! Its called Broken Orange Pekoe. Its a Nilgiris Orthodox variety and can be purchased online HERE . In case you can’t find it, you can use Assam or Darjeeling tea as well. These will need to be brewed with boiling water for a short time and cooled for making iced tea. Cold brewing these teas overnight will make them bitter. You could even go for Oolong for cold brew.
The peach syrup is a cinch to make too. I kept the sugar half of the water quantity here as the peaches were very sweet. You can double the quantity of the peach syrup and store it the refrigerator to add in your next batch of iced tea! Its fresh, its fruity, its tastes, well, so peachily bright!
