Cold Brew Method For Iced Tea

Yes, I said cold brewed! So in this recipe, instead of using tea bags or brewing tea leaves in boiling hot water, you simply steep the tea in a pitcher of water overnight. Next morning, stir in peach-infused syrup, and some mint/basil leaves and enjoy your Peach Iced Tea all day long!

Making this from scratch couldn't be simpler. The amount of sugar you want to add is totally up to you. It's free from all the nasties from a powdered pack or a bottled version. It's healthier, fresher, and cleaner. And environmentally friendly, think of all the plastic bags or bottles you didn't use!

You get the wonderful flavor of the tea you're using and the fruits you've added on. For the classic iced tea, all you need to do is add honey and some lemon juice to the cold brewed tea. It's sublime! Take my word for it.

What Tea Should You Use?

The tea I've used here is from Glendale Estate in Nilgiris (Tamil Nadu). It's called Broken Orange Pekoe. It's a Nilgiris Orthodox variety and can be purchased online.

In case you can't find it, you can use Assam or Darjeeling tea as well.

These will need to be brewed with boiling water for a short time and cooled for making iced tea. Cold brewing these teas overnight will make them bitter.

You could even go for Oolong for the cold brew.

Peach Syrup for the Iced Tea

The peach syrup is a cinch to make too. I kept the sugar half of the water quantity here as the peaches were very sweet. You can double the quantity of peach syrup and store it in the refrigerator to add to your next batch of iced tea! Exact process in the recipe card below.
