Flour: Regular all-purpose flour gives these apple blondies the best soft texture.

Butter: I used unsalted butter in this recipe. If using salted butter, omit the salt in the batter. We melt the butter for that wonderfully chewy texture. For an extra nutty flavor, you can also use browned butter as I did for my gingerbread madeleines.

Apple: Use any crisp, juicy, sweet apple variety that's easily available to you. I used Gala, but Honeycrisp, Fuji, Golden Delicious, Pink Lady - all will work.

Cinnamon: For that cozy, warm flavor that goes so well with apples!

Sugar: I used brown sugar for a caramel-like flavor. Light brown sugar will also work well here.

Vanilla extract: For rounding up the flavors. Use good-quality store-bought or homemade vanilla extract.

Egg: This apple blondie recipe uses 1 large egg plus an extra yolk. The extra yolk is the secret to making richer, chewier blondies, as I did for my chocolate chip coffee blondies.

Step-By-Step Instructions

Step 1: Combine melted butter and brown sugar in a large bowl. Whisk well until combined.

Step 2: Add the egg, egg yolk, and vanilla extract. Mix well.

Flour, cinnamon, salt, and baking powder on top of egg sugar mixture.

Step 3: Add the flour, cinnamon, baking powder, and salt. Mix until just combined.

Step 4: Toss the apples with a spoonful of flour and fold them into the batter.

Step 5: Transfer the batter to the prepared 8-inch pan. Spread it evenly and smooth out the top. Top with more diced apples if you wish.

Step 6: Bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs attached.

  • You can sprinkle cinnamon sugar on top of the batter before baking for extra crunch.
  • Don't overbake the blondies. Take them out of the oven when the top looks done, and the center is still a little soft. A toothpick inserted in the center should come out with a few moist crumbs attached. If the toothpick comes out clean, the apple blondies are overbaked!

How To Serve

These apple blondie bars are best served warm or at room temperature. We love them as-is, but they're also delicious with a scoop of vanilla ice cream.

Ingredients
 
 

  • 2/3 cup Butter, melted
  • 3/4 cup Brown sugar
  • 1 Egg
  • 1 Egg yolk
  • 1 tsp Vanilla extract
  • 1.5 cups All-purpose flour
  • 1 tsp Cinnamon
  • 1.5 tsp Baking powder
  • 1/4 tsp Salt
  • 1 large Apple Peeled, cored, and cut into small pieces.
  • 1 tsp All-purpose flour

Instructions
 

  • Preheat the oven to 180 C / 350 F. Line an 8" pan with parchment paper.
  • In a large bowl, combine melted butter and brown sugar. Whisk well until combined.
    2/3 cup Butter, melted, 1 cup Brown sugar
  • Add the egg, egg yolk, and vanilla extract.
    1 Egg, 1 Egg yolk, 1 tsp Vanilla extract
  • Add the dry ingredients - flour, baking powder, cinnamon, and salt.
    Mix until just combined. This is a thick batter.
    1.5 cups All-purpose flour, 1 tsp Cinnamon, 1.5 tsp Baking powder, 1/4 tsp Salt
  • Toss the diced apples with flour and fold into the batter.
    1 large Apple, 1 tsp All-purpose flour
  • Transfer the batter to the prepared pan and evenly spread it, smoothing out the top.
    Sprinkle some extra apple pieces on top if you want.
  • Bake at 180 C/ 350 F for 25- 30 minutes until the top is golden brown, and a toothpick inserted in the center comes out with a few moist crumbs attached.
  • Allow to cool before cutting into squares. Enjoy!
