Watermelon Blueberry Salad
Ingredients
- 2 cups Watermelon, seeded and cubed
- 1/2 cup Blueberries
- 3-4 Basil leaves, fresh
- 2-3 tbsp Mint leaves, fresh
- 2 tbsp Pumpkin seeds
Honey Lemon Dressing
- 1 tbsp Lemon juice
- 1 tbsp Honey
- 1/4 tsp Sea salt
- 1/4 tsp Coarsely ground black pepper
Instructions
- Place the watermelon in a large bowl or platter.
- Add the blueberries.
- Po. over the honey lemon dressing.
- Add the basil, mint, and pumpkin seeds. Combine gently.
- Chill the salad for at least 30 minutes before serving. Enjoy!
