    Watermelon Blueberry Salad

    The best part of Indian summers is the fruits, and no summer is complete without binging on watermelon in some form. This time, I’ve particularly fallen in love with any salad with watermelon.

    Haven’t tried one yet? You must! It’s a treasure waiting to be discovered.

    The perfect complement to a main meal, or if you’re like me, to snack on any time of the day. I feel like a bowl of watermelon salad with mint has become a permanent fixture in my refrigerator this past month. I just can’t stop sneaking bites.

    And, oh, it would make for the most unforgettable 4th of July fruit salad!

    DELICIOUS REASONS TO TRY BLUEBERRY WATERMELON SALAD

    Super hydrating and healthy, this fruit salad is sweet, savory, and everything nice.

    HOW TO MAKE WATERMELON BLUEBERRY SALAD?

    Step 1: Cut your watermelon into cubes, taking out as many seeds as possible.

    Step 2: Place in a serving bowl, and then add the blueberries.

    Step 3: Make the lemon-honey dressing by whisking honey and lemon juice. Season lightly with salt and pepper.

    Step 4: Pour over the fruits and toss gently.

    Pour the dressing over the watermelon and blueberries

    Step 5: Sprinkle pumpkin seeds and fold in a handful of chopped basil leaves and fresh mint.

    Step 6: Give the watermelon blueberry mint salad a light toss and then chill for 30 minutes to 1 hour.

    • Chilling the salad allows the flavors to marry and melt together.

    HOW TO STORE WATERMELON BLUEBERRY WITH MIND SALAD?

    Any salad with watermelon is best eaten the day it is made, but it stays well in the refrigerator for about 2 days as long as you store it in an airtight container.

    Do keep in mind that because you’ve added salt to the salad, the fruit will seep water. Also, the longer the watermelon blueberry salad sits, the more the mint and basil flavors intensify.

    VARIATIONS OF WATERMELON SALADS

    If you don’t have blueberries or just can’t be fussed with sourcing them but still want to make an easy salad recipe with watermelon, then opt for the classic watermelon feta mint salad.

    Seasoning: Black salt would be a fantastic substitute in this salad for that savory hit, I think. 

    Fruits: Feel free to replace blueberries with cherries, strawberries, or any other berries.

    Dressing: Maple syrup or honey salad dressings; any work here.

    Add-ins: The secret to a good summer salad is contrast. It should be rich but acidic. It should be creamy yet crunchy. That’s why I love, love to mingle flavors and textures. It keeps the salads from being boring and makes them more complete.

    The fresh herbs give the watermelon mint salad boldness, but if you really want to amp it up, seeds are a must. Don’t have pumpkin? Switch to sunflower or chia seeds.

    Finely chopped nuts, like cashews or almonds, are another delicious choice. I would highly recommend lightly toasting them. It would open up a whole new spectrum of flavors and textures.

    Watermelon Blueberry Salad

    Ingredients

    • 2 cups Watermelon, seeded and cubed
    • 1/2 cup Blueberries
    • 3-4 Basil leaves, fresh
    • 2-3 tbsp Mint leaves, fresh
    • 2 tbsp Pumpkin seeds

    Honey Lemon Dressing

    • 1 tbsp Lemon juice
    • 1 tbsp Honey
    • 1/4 tsp Sea salt
    • 1/4 tsp Coarsely ground black pepper

    Instructions

    • Place the watermelon in a large bowl or platter.
    • Add the blueberries.
    • Po. over the honey lemon dressing.
    • Add the basil, mint, and pumpkin seeds. Combine gently.
    • Chill the salad for at least 30 minutes before serving. Enjoy!

    Honey Lemon Dressing

    • Combine the lemon juice, honey, salt, and pepper in a small bowl.
