Cinnamon pancakes, or what I call them in my head, fluffy pancakes, are the easiest way to make your weekend breakfast special. It’s a homemade pancake recipe that gets those lazy kids to jump out of bed! A simple, foolproof pancake recipe that guarantees great results every time.
I swear, this works every single time for me. I just have to say pancakes with cinnamon, and they come running! They even help set up the photography boards and props if I'm doing a pancake photo shoot for the blog.
Besides getting those kids up and running, I love this cinnamon pancake recipe because the clean-up is faster than you can ever imagine.

WHY MAKE FLUFFY CINNAMON PANCAKES?
It’s my basic go-to recipe and truly never fails.
The combination of fluffy pancakes and cinnamon is comfort food at its finest.
It's versatile and works with any flavor profile you're going for, not just cinnamon pancakes.
HOW TO MAKE CINNAMON PANCAKES?
Step 1: Sift and mix flour, baking powder, baking soda, and salt in a small bowl. Add cinnamon powder.
Step 2: Whisk the milk, oil, yogurt, and vanilla extract in a separate bowl.
Step 3: Pour the wet ingredients into the dry and combine till you have a smooth, lump-free, thick cinnamon pancake mix.
Step 4: Heat a griddle and grease it. Pour the fluffy cinnamon pancake batter on it.
Step 5: Cook one side of the pancake for 1 to 2 minutes, till the underside is golden.
Step 6: Flip the cinnamon pancake carefully and cook the other side.
Step 7: Repeat till you have a stack of warm cinnamon vanilla pancakes ready.
Final step: Serve and savor!
WHAT MAKES PANCAKES FLUFFY?
- The trick to fluffy pancakes is to add an extra 1/2 teaspoon of baking powder.
- Do not overmix the batter.
- Let the cinnamon pancake mix rest for 5–10 minutes before cooking.
- Flip the pancakes gently, and please don't press them down with your spatula.
HOW MUCH CINNAMON TO ADD TO THE PANCAKE BATTER?
The amount of cinnamon you should add to pancake batter depends on your personal preference. Adjust it to suit your taste—a stronger or milder hint of cinnamon. I find about 1 and a half teaspoons to be perfect.
It's always a good idea to start with a smaller amount and then taste the batter before adding more, as you can always add more cinnamon but can't easily take it out once it's mixed in.
CINNAMON PANCAKES RECIPE INGREDIENTS & SWAPS
Flour: I used whole wheat here. Make the homemade pancakes with any flour of your choice — all-purpose flour, buckwheat, or ragi (finger millet flour). You really can't go wrong!
Cinnamon: If you’re simply hankering for plain fluffy pancakes, leave the cinnamon out and just make vanilla-flavored pancakes. Or add some lemon or orange zest.
Yogurt: Don't have Greek yogurt? Drain homemade yogurt for a few minutes to get rid of excess liquid and use that.
With eggs: This is an eggless cinnamon pancake recipe. Yes, you can add eggs to it, and the pancakes will still come out fluffy, soft, and moist. Simply swap yogurt for eggs. I’ve even made fluffy cinnamon pancakes with both eggs and yogurt.
Milk: I'm lactose intolerant; that’s why I used coconut milk. Soy or almond will work too. If I'm not eating the homemade pancakes, I make them with regular milk.
Add-ins: These pancakes with cinnamon are delicious with:
- A handful of chocolate chips
- Mashed banana
- Blueberries
- Diced apple
You can even add a teaspoon or two of coffee powder, cocoa, or both to this fluffy pancake recipe. Or stir in a nice fruit preserve.
HOW TO SERVE CINNAMON PANCAKES
My kids love eating cinnamon pancakes with maple syrup and chocolate syrup. I enjoy these fluffy pancakes with honey or a fresh fruit compote and a bunch of fresh fruits.
- A thick yogurt sweetened with honey is also lovely with pancakes.
- For an extra special flavor, serve with orange honey syrup.

The Fluffiest Cinnamon Pancakes
Ingredients
- 1.5 cups Wholewheat flour
- 2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 1.5 tsp Cinnamon powder
- 3 tbsp Oil
- 1/4 cup Greek yogurt
- 1 cup Coconut milk You can use any plant-based or regular cow's milk
- 1 tsp Vanilla extract
Instructions
- In a large bowl, sift together the flour, baking powder, baking soda, and salt. Stir in the cinnamon powder.
- In a small bowl, whisk together the milk, oil, yogurt, and vanilla extract. Pour over the dry ingredients and mix well to form a smooth, lump-free, thick batter.
- Grease a griddle with oil and heat it. Pour a small ladle full of batter on the griddle. Let the pancake cook for 1-2 minutes more till the underside is golden. Carefully flip it over. Cook on the other side till golden brown. Repeat till all the batter is used up.
- Serve warm with maple syrup or honey. For an extra special flavour, you can serve these with Orange Honey Syrup.* Enjoy!

Yes, you can skip the cinnamon powder. For making chocolate pancakes, 1-2 tbsp cocoa powder should be enough. Hope this helps. 🙂
