Apples: Use any variety you like. I used Gala here as we have been eating those lately!
Puff pastry: Store-bought or homemade, both will work well here. Make sure the pastry is thawed for easier handling.
Cinnamon powder: For making cinnamon sugar - that makes these apple pastries taste so good! You can also use pumpkin pie spice as a variation!
Sugar: Regular granulated sugar is fine. You can also use brown sugar for a more caramelized flavor.
Egg: For brushing on the pastries. This is optional. You can use cream instead if you wish. Both will give a nice sheen to the donuts.

How To Make Easy Puff Pastry Apple Donuts
Preheat your oven and line a baking tray with parchment paper for easier clean up.
Step 1: Cut the apples into rings, about 1/4" thick.
Step 2: Use a small cookie cutter to cut out the core from the apples, to make a ring shape.
Step 3: Roll out the puff pastry into a rectangle and cut into 1/2" strips.
Step 4: Make cinnamon sugar - mix sugar and cinnamon powder in a small bowl. Dip each apple ring in the cinnamon sugar
Step 5: Wrap each apple ring with a pastry strip. You'll probably need 2-3 strips per apple ring. Place the pastry-wrapped apple rings on the baking tray. Brush with egg wash and sprinkle with cinnamon sugar.
Step 6: Bake for 20-25 minutes, or until golden brown. Allow the pastries to cool for 5-10 minutes and serve warm!

Easy Puff Pastry Apple Donuts
Ingredients
- 17 oz Puff pastry
- 2 Apples
- 3 tbsp Sugar
- 1 tbsp Cinnamon powder
- 1 Egg, beaten with 1 tbsp water for egg wash You can also use cream
Instructions
- Preheat your oven to 190 C/ 375 F. Line a baking tray with parchment paper.
- Allow your puff pastry to sit at room temperature for 10-15 minutes.
- Cut your apples into rings, using a sharp knife. They should be about 1/4" thick. You should get about 12 slices.
- Use a small cookie cutter to cut out the core from the apples, to make a ring shape.
- Mix the sugar and cinnamon powder in a bowl. This is your cinnamon sugar.
- On a lightly floured surface, roll out the puff pastry into a rough rectangle. Cut into 1/2" strips.
- Assemble the apple rings- Dip each apple ring in the cinnamon sugar mixture and then wrap with the pastry strip. Repeat with the remaining apple rings.
- Place the pastry-wrapped apple rings on the prepared baking tray. Brush with the egg wash and sprinkle some cinnamon sugar on top.
- Bake at 190 C / 375 F for 20-25 minutes until the pastry is golden brown. Begin checking after the 15-minute mark, as all oven times vary.
